Some Meal Ideas using the above deals:

(Disclaimer, I'm normally Anti-Cream of Mushroom BUT this is really easy and tasty)

6 Boneless, Skinless Chicken Breast halves
1 Cup White Rice
1 Cup Milk
1 Can Cream of Mushroom Soup

Pour rice in casserole dish.  Place chicken breasts on top of rice.  Mix cream of mushroom soup and milk in a bowl and pour on top of chicken breasts.  Sprinkle with a little pepper and  Bake in oven @ 350 for 60 minutes.   Serve chicken over rice with sauce and a side of Green Giant Valley Fresh Steamers.

Soured Beef
(This is my hubby's creation and it's good!)

Butter
Sliced Mushrooms
1 Pound Ground Beef
1 packet brown gravy mix
Peas (canned or frozen is fine)

Sour Cream

Idahoan Mashed Potatoes



Saute the mushrooms in a little butter, then add & brown the hamburger, drain & return to pan.  Add gravy mix and water per packet directions.  Add peas, and mix in a little sour cream until the gravy turns in light brown.  Heat till warm.  Serve over Idahoan Mashed Potatoes.

Fiesta Enchilada Bake from Bettycrocker.com

We haven't tried this yet, but it's on our list!

1 1/4 lb lean ground beef
1 box (8.8 oz) Old El Paso® taco dinner kit
2/3 cup water
2 cans (10 oz each) Old El Paso® enchilada sauce
1/2 cup sliced green onions (8 medium)
2 cups shredded Cheddar cheese (8 oz)
3 cups shredded lettuce
1/2 cup sour cream

Heat oven to 325°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 2-quart saucepan, cook ground turkey over medium-high heat 4 to 6 minutes, stirring occasionally, until no longer pink; drain. Stir in seasoning mix from dinner kit and water. Cook as directed on box.

Pour 1 can of the enchilada sauce into baking dish. Break taco shells from kit in half; layer half of the shells over sauce, overlapping if necessary. Top with turkey, onions and 1 cup of the cheese. Layer remaining shells over cheese. Pour remaining can of enchilada sauce over shells, coating well.

Cover dish with foil. Bake about 30 minutes or until hot and bubbly. Remove foil; sprinkle remaining 1 cup cheese over top. Bake uncovered about 15 minutes longer or until cheese is melted. Top individual servings with lettuce, sour cream and taco sauce from kit.

Oh, and look at this - ANOTHER Cream of Mushroom recipe... aaagh I am going to cooking prison for this one.  I figure it uses a lot of the same ingredients as the other meals, and using the same ingredients helps save money!

Original Recipe Yield 2 servings

Ingredients

    1 (16 ounce) package medium seashell pasta
    1 tablespoon vegetable oil
    1 (10.75 ounce) can condensed cream of mushroom soup
    1 (15 ounce) can mixed vegetables, drained (use a package of the Green Giant steamers instead!)
    1 (6 ounce) can Starkist tuna, drained
    2 cups shredded Cheddar cheese
    salt and pepper to taste

Directions

Bring a large pot of lightly salted water to a boil. Add 1 tablespoon oil to the water to prevent sticking. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
In a 2 quart saucepan over medium heat, combine the cream of mushroom soup, mixed vegetables, canned tuna, and 1 cup of he cheddar cheese. Gently fold pasta into the soup mixture and mix thoroughly. Pour pasta and soup mixture into a 11x7 inch baking dish. Sprinkle remaining cup of cheese on top.
Bake in a preheated oven until cheese is melted and bubbly.



Make Your Own Mixes - Muffin Mix

Packaged foods are super convenient, but can be costly.  A great way to save money is to make your own mixes ahead of time.

I've been using a recipe for my own muffin mix for years.

Make Your Own Muffin Mix
(When prepared, makes about 4 dozen medium muffins)

4  Cups Whole Wheat Flour
4 Cups All-Purpose Flour
3 Cups Sugar
3 TBSP Baking Powder
2 TSP Salt
2 TSP Nutmeg
2 TSP Cinnamon

Pour everything into your air-tight container, put the lid on and shake really hard to mix together. 

To Prepare, Use:

2 & 3/4 Cups of Mix,
1 Cup of Milk
1 Egg
1/2 Cup of Oil or Melted Butter/Margarine
Add 1 Cup frozen blueberries, chocolate chips, or other fillers as desired. 

Mix together and pour into muffin cups.  Bake @ 400 for 15 Minutes or until done.

As you can see, I wrote this on my container with a permanent marker so it's always handy!

Make Your Own Cinnamon Rolls

I used to buy refrigerated cinnamon rolls in a can for an occasional breakfast treat, but  I recently learned to make my own.  It was a lot easier than I thought it would be.  I found a recipe on Better Homes and Gardens that  was pretty good, although next time I will increase the amount of filling.

There are lots of recipes on the web for cinnamon rolls - find one that you like and go for it!  A good place to start is  Allrecipes .

The trick, for me, seemed to be getting the temperature right for the yeast.  I bought a classic (not digital)  instant read thermometer which helped a lot.

SUPER EASY Peanut Butter Cookies

1 cup peanut butter
1 cup sugar
1 egg
1 tsp vanilla extract

Mix all ingredients together in bowl.  Using a tablespoon, shape into balls and place on cookie sheet.  Use a fork to make a criss cross pattern and flatten the cookies. 

Bake @ 350 for about 10 minutes or until light brown. 

Cool, and enjoy!

Safer, Cheap Oven Cleaner

Hello, all!   I've been off the blog for a few days due to kidney stones :(    A big thank you to Heather for keeping things going while I was out of it! 

Today, we bring to you -  Safer, Cheap Oven Cleaner!

A few years ago, I got a chemical burn from that spray oven cleaner stuff and I've been hesitant to use it again   I discovered a handy trick for cleaning my oven (it's not self-cleaning, bummer!).

Safer, Cheap Oven Cleaner

1 Cup of Ammonia

Pour 1  Cup of Ammonia in bowl.   Place the bowl inside the oven and close the door.  Let it sit overnight.  In the morning, wipe the grime away with a scrubby pad.
