Who can be bothered with making meatballs? Not me! I love Italian wedding soup, but make a simplified version of it.
Lazy Italian Wedding Soup
1 TBSP Oil
1 Chopped Onion
2 Diced Carrots
2 Diced Stalks Celery
1 pound ground meat
2 TSP Italian Seasoning (Or 1/2 tsp ea. basil, garlic, oregano)
2 Boxes (32 oz) Low Sodium Chicken Broth 1 pound spinach (fresh or frozen)
2 Eggs
2 TBSP Grated Parmesan Cheese (not the canned kind)
2 Boxes (32 oz) Low Sodium Chicken Broth
Cooked chopped onion, carrots & celery in oil in stockpot until soft. Add cooked meat and seasonings until meat is browned. Drain excess fat.
Add Broth, and bring to a boil. Add spinach and cook until tender. Whisk eggs and parmesan together in a bowl, and slowly add to stockpot while stirring soup. The egg mixture should form thin strands. Add salt & pepper to taste.
